Inchi Curry
Description
Inchi Curry (ഇഞ്ചി കറി/ പുളിയിഞ്ചി) Ginger pickle - One of the first things served in any Kerala feast (sadya). This specific pickle have some mythological background too. It's considered as equal to 101 currys. This sweet -spicy pickle is healthy too. It helps digestion.

In a pan heat oil, add Ginger and Green chillies and saute well

Now let's extract Tamarind juice , and boil it with Turmeric Powder and chilly powder

Next we will add the ginger, green chilly mix. Let's boil it for few more minutes

For a different taste, you can add Jaggery and mix well (optional step)

In a pan heat oil. Add Mustard seeds, Green chillies, Dry red chillies

Now lets garnish the pickle with Mustards seed mix
