When you think of comfort on a plate, it’s hard to beat the timeless combo of poori and masala. And in Kerala, this pairing gets its own delicious twist – one that’s gentle, spiced just right, and carries the unmistakable flavour of home.
Unlike the dry, yellow aloo bhaji served elsewhere, Kerala’s version of poori masala is soft, saucy, and touched with the magic of freshly grated coconut. What makes this dish truly stand out is the addition of a ground coconut masala, blended with garam masala, green chillies, and ginger – giving it a warm, fragrant base that wraps around the boiled potatoes like a creamy, comforting hug.
Tempered with mustard seeds, curry leaves, and sautéed onions, the masala takes on layers of flavour without being too spicy or heavy. A few green peas add a pop of colour and sweetness, and the whole dish simmers down to a silky, mellow gravy that coats each piece of potato beautifully.
This masala is a perfect companion to crispy, puffed-up pooris, soaking into their golden layers bite after bite. But it doesn’t stop there – it’s just as lovely with soft chapathis, or even tucked into a dosa if you’re the adventurous kind.
Simple but thoughtful, this version of Kerala-style Poori Masala reminds us how everyday ingredients – like coconut, potato, and a little spice – can come together to create something truly satisfying.
