Wash the basmati rice thoroughly, drain it, and set it aside.

In a large bowl or pot, add water along with enough salt, a star anise, and a cinnamon stick. Bring it to a boil.

Add the basmati rice. (Note: Water-to-rice ratio is important here.)

Let it cook for about 8 minutes, or until it's almost done but not mushy.

Drain the water and allow the rice to cool completely.

Cook the green peas separately and keep them aside.

In a thick-bottomed pan, heat some ghee. Fry the raisins and cashew nuts until golden. Remove and set aside.

In the same ghee, add chopped garlic and sauté well.

Add the rest of the chopped vegetables and sauté lightly.

(Make sure they stay slightly crisp - don't overcook or let their colour fade.)

Add the cooked green peas to the vegetables and mix well.

Now add the boiled rice and stir continuously.

(You may add more ghee if needed - this is the "frying" part.)

Once everything is mixed and heated through, turn off the heat.

Garnish with the fried raisins and cashew nuts.
