First of all, Peel the skin off of Raw plantain and dip in to Turmeric water for half an hour

Now slice them in to half lengthwise and again slice in to 1/2 inch pieces

Heat oil in a pan, Deep fry plantain in to golden yellow colour. Keep it aside

Next, we will melt jaggery with a teaspoon of water

we will strain it for impurities, and keep it aside

Grind Dried Ginger, Cumin seeds and Cardamom in to powder

Heat the Jaggery syrup for two minutes, stir continuously.

Add the masala powder and mix well.

Now you could add fried banana chips in to it and mix well. Every part of the chips should be covered by the jaggery syrup

Finally, Sprinkle a teaspoon of rice powder over it and mix well.

Sarkara Varatti or Sarkara Upperi is ready
