Adai Dosa is a crispy pancake from Tamil Nadu. It can be made with or without fermentation, though the traditional recipe doesn’t require fermentation.

First, soak rice, toor dal, chana dal, green gram, and red chillies in separate bowls for at least 2 hours.

Grind everything together to make a coarse batter.

Add chopped green chillies, curry leaves, ginger, salt, and asafoetida, and mix well.

Heat a tawa and add a teaspoon of coconut oil.

Just like making dosa, pour the batter and spread it into a thick disc.

Drizzle some oil over the dosa and cook both sides until golden and crisp.

Adai Dosa is ready. You can enjoy it with jaggery and butter or with sambar, chutney powder, coconut chutney, etc.
