500gram Karimeen (Green chromide/ Pearl spot fish)
3/4teaspoon Turmeric powder
4teaspoon Chilly powder
2 1/2teaspoon Black Pepper powder
1/2teaspoon Coriander powder
1teaspoon Salt
1tablespoon Lemon juice
1/2cup Shallots -sliced
2 Green Chillies -sliced
1spring Curry leaves
2 Tomato -sliced
1teaspoon Ginger-Garlic paste
1 1/2tablespoon Coconut milk
Banana Leaf and Oil as required

Karimeen pollichathu is one of the most famous Kerala delicacies for the world. Making is simple but Taste unique. So let’s start

First of all, clean the fish well and keep it aside

we will prepare the masala for marination. Mix half teaspoon Turmeric powder, three teaspoons Chilly powder, two teaspoons Black pepper powder and enough salt

Add one and a half tablespoon Lemon juice and make the mix to a paste. You can add enough water for the purpose

Make cutting marks on the sides of the fish. Apply the marination masala over the fish

Heat oil and Fry the fish 70%. Keep it aside

Next, we will make the masala for the fish. Add half cup Shallots sliced to the same oil we used to fry fish. If required, you can add more oil

Saute it for some time. Add 1-2 Green chillies and a spring Curry leaves. saute it well

When the Shallots seems cooked, add 2 sliced Tomatoes.

We will add a teaspoon Ginger-Garlic paste to the mix when Tomatoes are cooked. Don’t forget to add enough Salt

Now, we will add some masala to the mix. Add 1/4 teaspoon Turmeric powder, 1 teaspoon Chilly powder, 1/2 teaspoon Black pepper powder and 1/2 teaspoon Coriander powder

Combine everything well. Saute it for some more time.

When it starts to be dry, add Coconut milk to the mix and cook till it becomes mashy

As we mentioned, we will further cook the fish in banana leaf. we will prepare the banana leaf

We will prepare with the leaf by moving it over the flame. The flame will make the banana leaf more flexible and less chance to break it while folding

Next place the Banan leaf. It’s better to place another piece of banana leaf over the first one to avoid excess burn off

Place some masala over the leaf as per the size of the fish. Place the fish and cover it with masala on both sides

Fold the leaf, so that the fish will be in the bundle. Tight the bundle with some threads for security

Heat some oil in a pan, place the bundle, pour some more oil over it. Cover it with a lid and cook it for some time

When one side cooked well, flip it and cook the other side too.

When both sides become light brown colour, you can remove it from the flame.

Karimeen pollichathu is ready. Enjoy Kerala traditional karimeen with lunch
