Add onion and green chillies. Sauté until the raw smell goes away.

Add salt and continue to sauté until the onions turn brown.

Add all the powdered spices and mix well.

Add chopped tomatoes or tomato puree and sauté until the mixture thickens.

If needed, add a little water to adjust the consistency of the gravy.

Add boiled eggs and gently mix so that the eggs are well coated with the masala.

Serve hot with appam, kallappam, or idiyappam.
